For the Spicy Chicken:
- 1 boneless skinless chicken breast half
- ½ cup buttermilk
- ¼ cup hot sauce adjust to your desired spice level
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Pinch of cayenne pepper optional
- Salt and freshly ground black pepper to taste
- 1 cup all-purpose flour
- 1 ½ cups panko breadcrumbs
For Serving:
- Lettuce shredded iceberg or romaine
- Tomato sliced
- Mayonnaise optional
- Spicy mayo optional – recipe below
Spicy Mayo (Optional):
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha adjust to your preference
- Pinch of paprika
Prepping the Chicken:
● Place the chicken breast half between two pieces of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about ½ inch.
● In a shallow dish, combine the buttermilk, hot sauce, paprika, garlic powder, onion powder, and cayenne pepper (if using).
● Season with salt and pepper. Add the chicken breast and marinate for at least 15 minutes, or up to 30 minutes for extra flavor.
Creating the Spicy Breading:
Cooking the Spicy Chicken:
● Heat about ¼ inch of oil in a frying pan or large skillet over medium heat. Remove the chicken from the marinade, letting any excess drip off.
● Dredge the chicken in the flour mixture, then coat it generously in the panko breadcrumbs, ensuring even coverage.
● Carefully place the breaded chicken in the hot oil. Cook for 5-7 minutes per side, or until golden brown and cooked through.
● Use a meat thermometer to check the internal temperature, which should reach 165°F (74°C) for safe consumption. Transfer the cooked chicken to a plate lined with paper towels to drain excess oil.
Spicy Mayo (Optional):
● In a small bowl, whisk together the mayonnaise, sriracha, and paprika. Adjust the sriracha amount to your desired level of spice.
Assembly and Enjoyment!
● Toast the hamburger buns if desired. Spread a layer of mayonnaise or spicy mayo (if using) on the bottom bun. Layer with lettuce, tomato, and the crispy spicy chicken. Top with the other bun and devour!
