Chicken Philly Cheese Steak Recipe

Ingredients
  

  • 2 tablespoons olive oil divided
  • 1 yellow onion thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 4 slices provolone cheese
  • 2 hoagie rolls toasted

Instructions
 

Sauté the Veggies:

  • Heat 1 tablespoon of olive oil in your skillet over medium heat. Add the onions, peppers, and a pinch of salt.
  • Sauté for 5-7 minutes, or until softened and slightly caramelized. Remove the veggies from the pan and set aside.

Cook the Chicken:

  • Add the remaining tablespoon of olive oil to the pan and increase the heat to medium-high. Season the chicken with Italian seasoning, paprika, salt, and pepper.
  • Cook for 5-7 minutes, stirring occasionally, or until the chicken is cooked through and golden brown.

Assemble the Sandwiches:

  • Return the cooked veggies to the pan with the chicken. Toss to combine and heat through for another minute.
  • Divide the mixture evenly between the toasted hoagie rolls. Top each sandwich with a slice of provolone cheese and let it melt for 30 seconds, or until golden brown and bubbly.
