Ingredients
  

  • 3 cans 15 oz each cannellini beans, undrained, separated
  • 2 cans 10 oz each diced tomatoes with green chilies (e.g., Rotel), undrained
  • 1 can 15 oz whole kernel corn, undrained
  • 1 can 15 oz cream-style corn
  • 1 rotisserie chicken meat removed from bones and shredded (approximately 4 cups)
  • 1 can 15 oz black beans, undrained
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 tablespoon canola oil
  • 2 cloves garlic minced
  • 1 medium onion chopped
  • 1 teaspoon kosher salt
  • 1/4 cup sour cream
  • 6 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions
 

Prep the Ingredients:

  • Open all the canned ingredients (cannellini beans, diced tomatoes, corn, black beans, cream-style corn) and drain the cannellini beans and black beans, while keeping the juices from the tomatoes and corn. Shred the rotisserie chicken into bite-sized pieces.

Cook the Aromatics:

  • In a large stockpot or Dutch oven, heat the canola oil over medium heat. Add the minced garlic and chopped onion. Cook for 3-4 minutes, stirring occasionally, until the onions become soft and translucent.

Add the Spices:

  • Stir in the ground cumin, oregano, and kosher salt. Cook for another 1 minute, allowing the spices to toast and become fragrant.

Combine the Liquids and Beans:

  • Pour in the chicken broth and bring it to a simmer. Add the drained black beans, cannellini beans (drained), and the corn (whole kernel and cream-style, undrained). Stir to combine.

Add Tomatoes and Chicken:

  • Add the undrained diced tomatoes with green chilies and the shredded rotisserie chicken to the pot. Stir well and bring the soup to a simmer. Let it cook for about 15-20 minutes, allowing the flavors to meld together.

Add Cream and Final Seasoning:

  • Stir in the heavy cream and sour cream. Taste the soup and adjust with additional salt and pepper as needed. Let it simmer for an additional 5 minutes, then remove from heat.

Finish with Lime:

  • Squeeze the juice of 1 lime into the soup for a fresh burst of flavor. Stir to combine.

Serve:

  • Ladle the soup into bowls and serve with optional toppings such as shredded cheese, tortilla strips, or fresh cilantro.
