- ½ cup all purpose flour
- 2 tablespoons white vinegar
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 2 tablespoons vegetable oil
- ¼ cup ketchup
- 1 cup pineapple chunks canned, with juice
- 2 tablespoons water
- 3 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 large green bell pepper cut into chunks
- 2 tablespoons soy sauce
Season the chicken breasts with salt and black pepper on both sides. Dredge them in flour, ensuring an even coating. Heat vegetable oil in a skillet over medium heat. Add the floured chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Once browned, remove the chicken from the skillet and set aside.
In the same skillet, combine the reserved pineapple juice, ketchup, soy sauce, white vinegar, brown sugar, and cornstarch dissolved in water. Stir well to combine. Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes until the sauce thickens.
Add the pineapple chunks and bell peppers to the skillet. Stir to combine and cook for an additional 2 minutes, allowing the flavors to meld.
Return the seared chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the top of each piece. Cover and simmer for 10-15 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
