Ingredients
  

  • 4 boneless skinless chicken breasts
  • ½ cup all purpose flour
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • ¼ cup ketchup
  • 1 cup pineapple chunks canned, with juice
  • 2 tablespoons water
  • 3 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 large green bell pepper cut into chunks
  • 2 tablespoons soy sauce

Instructions
 

  • Season the chicken breasts with salt and black pepper on both sides. Dredge them in flour, ensuring an even coating. Heat vegetable oil in a skillet over medium heat. Add the floured chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Once browned, remove the chicken from the skillet and set aside.
  • In the same skillet, combine the reserved pineapple juice, ketchup, soy sauce, white vinegar, brown sugar, and cornstarch dissolved in water. Stir well to combine. Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes until the sauce thickens.
  • Add the pineapple chunks and bell peppers to the skillet. Stir to combine and cook for an additional 2 minutes, allowing the flavors to meld.
  • Return the seared chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the top of each piece. Cover and simmer for 10-15 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Serve the Waikiki Chicken hot, garnished with additional pineapple chunks if desired. Pair with steamed rice for a complete meal.

Notes

For a vegetarian version, substitute the chicken with tofu or tempeh. Adjust the amount of black pepper or add red pepper flakes to increase the spiciness of the dish.
