For the Chicken:
- 2 chicken breasts boneless and skinless
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
For the Thunder Sauce:
- 2 tablespoons chili paste or hot sauce adjust for heat preference
- 1 tablespoon soy sauce
- 1 tablespoon honey or maple syrup
- 1 tablespoon ginger freshly grated
- 1 teaspoon garlic minced
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon ground black pepper
For Garnish:
- Sliced green onions
- Sesame seeds optional
- Fresh cilantro optional
1: Marinate the Chicken
Start by cutting the chicken breasts into bite-sized cubes. Place them in a large mixing bowl and add soy sauce, rice vinegar, and cornstarch.
Toss the chicken to coat evenly and let it sit for about 15 minutes. This will not only tenderize the chicken but also infuse it with flavor.
2: Prepare the Thunder Sauce
While the chicken is marinating, it’s time to prepare the sauce. In a small bowl, whisk together chili paste, soy sauce, honey, ginger, garlic, sesame oil, rice vinegar, and black pepper. Stir well until the sauce is smooth and the honey is fully dissolved. Set the sauce aside.
3: Cook the Chicken
Heat vegetable oil in a medium-sized pan or wok over medium-high heat. Once the oil is hot, add the marinated chicken pieces.
Cook for about 15-20 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through.
4: Toss the Chicken in Thunder Sauce
Special Notes
1. Adjusting Spice Level: If you prefer a milder version of Thunder Chicken, you can reduce the amount of chili paste or hot sauce. Alternatively, swap it for a milder sriracha or sweet chili sauce to keep the flavor but reduce the heat.
2. Make-Ahead Sauce: The Thunder Sauce can be made in advance and stored in an airtight container in the refrigerator for up to a week. This makes it perfect for quick weeknight dinners.
3. Vegetable Add-Ins: Feel free to add vegetables like bell peppers, carrots, or snap peas to the dish. They can be cooked along with the chicken or stir-fried separately for extra crunch and nutrition.
4. Storage: Leftovers can be stored in the refrigerator for up to 3 days. Reheat on the stove over low heat to prevent the sauce from thickening too much.
