  • 1/2 cup Saltine Crackers Crushed
  • 1 cup Buttermilk

1. Prepare the Chicken:

  • Start by tenderizing the chicken breasts. Place each chicken breast between two pieces of plastic wrap or parchment paper and gently pound them to an even thickness using a meat mallet or rolling pin. This helps ensure the chicken cooks evenly.

2. Set Up the Dipping Stations:

  • In a shallow dish, combine the milk and buttermilk. In another shallow dish, crush the saltine crackers until they are fine crumbs and add them to the dish. Season the cracker crumbs with black pepper and salt.

3. Coat the Chicken:

  • Dip each chicken breast first into the milk and buttermilk mixture, making sure it is fully coated. Then, transfer the chicken to the crushed saltine cracker mixture. Press down gently to ensure the coating sticks to the chicken.

4. Fry the Chicken:

  • Heat the butter in a large skillet or frying pan over medium-high heat. Once the butter is melted and the skillet is hot, carefully add the coated chicken breasts.
  • Fry the chicken for about 3-4 minutes on each side or until golden brown and crispy. You may need to adjust the heat to ensure the chicken cooks through without burning the coating.
