Ingredients
  

For the Chicken:

  • 1 whole chicken around 3-4 lbs, cut into pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 28 oz can tomato sauce
  • 1 cup chicken broth
  • 1/2 cup chopped cilantro
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1/4 teaspoon allspice

For the Sandwich:

  • 4 crusty French rolls
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cabbage
  • 1/4 cup chopped cucumber
  • 1/4 cup sliced radishes
  • 1/4 cup chopped tomato
  • 1/4 cup pickled jalapeños optional
  • 1 avocado sliced (optional)
  • Cilantro sprigs for garnish

Instructions
 

Simmer the Savory Chicken:

  • In your large pot, heat a drizzle of olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, bell peppers, and cook for another 2 minutes.
