- 1 cup sliced mushrooms
- ⅓ cup diced onion
- 1 tablespoon light oil
- 3 garlic cloves minced
- ½ cup heavy cream
- 1½ cups milk
- 2 cups low-sodium chicken stock
- 3 tablespoons tapioca starch
- 1 teaspoon salt
- ½ teaspoon ground pepper
- 1¾ cups shredded cheddar cheese
- 1 package gluten-free spaghetti
Preheat the oven to 375°F (190°C). Cook the gluten-free spaghetti according to package instructions, reducing the cooking time by one minute.
In a skillet, sauté diced onion and minced garlic in oil until translucent. Add sliced mushrooms and cook until softened.
Stir in tapioca starch, then add heavy cream, milk, and chicken stock. Bring to a boil. Add shredded chicken and half of the cheese. Stir until the cheese melts.
