Ingredients
  

  • 2 cups shredded rotisserie chicken
  • 1 cup sliced mushrooms
  • cup diced onion
  • 1 tablespoon light oil
  • 3 garlic cloves minced
  • ½ cup heavy cream
  • cups milk
  • 2 cups low-sodium chicken stock
  • 3 tablespoons tapioca starch
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • cups shredded cheddar cheese
  • 1 package gluten-free spaghetti

Instructions
 

  • Preheat the oven to 375°F (190°C). Cook the gluten-free spaghetti according to package instructions, reducing the cooking time by one minute.
  • In a skillet, sauté diced onion and minced garlic in oil until translucent. Add sliced mushrooms and cook until softened.
  • Stir in tapioca starch, then add heavy cream, milk, and chicken stock. Bring to a boil. Add shredded chicken and half of the cheese. Stir until the cheese melts.
  • Combine the cooked spaghetti with the sauce mixture. Transfer to a casserole dish, top with remaining cheese, and bake for 20 minutes until bubbly.
  • Let the chicken rest for 10-15 minutes before carving. Serve with your favorite gluten-free sides.
