Ingredients
  

  • 4 boneless skinless chicken breasts
  • ¼ cup orange juice
  • ¼ cup lime juice
  • ¼ cup pineapple juice
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil or vegetable oil
  • Fresh cilantro optional, for garnish

Instructions
 

  • In a large mixing bowl, combine the orange juice, lime juice, pineapple juice, minced garlic, ground cumin, dried oregano, turmeric, salt, and pepper. Whisk until all ingredients are well incorporated.
  • Place the chicken breasts into a zip lock bag or marinating container. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the container and refrigerate for at least 3 hours, preferably overnight, to allow the flavors to meld.
  • Preheat your grill or stovetop pan over medium high heat. Brush with olive oil or vegetable oil to prevent sticking. Remove the chicken from the marinade, letting any excess drip off.
  • Grill each side for 6-7 minutes or until the internal temperature reaches 165°F (74°C). The chicken should be golden brown with a slight char.
  • Once cooked, remove the chicken from the heat and let it rest for a few minutes. Garnish with freshly chopped cilantro if desired. Serve alongside your favorite sides, such as rice, beans, or a fresh salad.

Notes

If you want to add a little extra tropical flair, try serving your Pollo Tropical chicken with a side of coconut rice or a fresh mango salsa.
