Equipment

  • Large skillet
  • Pot for boiling pasta
  • Wooden spoon or spatula

Ingredients

  • 8 oz about 225g Pasta Roni (your favorite flavor)
  • 2 boneless skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup 240ml chicken broth
  • 1/2 cup 120ml heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions

Prepare the Pasta:

  • Cook the Pasta Roni according to package instructions until al dente. Drain and set aside.

Sear the Chicken:

  • Heat olive oil in a large skillet over medium-high heat. Add diced chicken breasts and season with salt and pepper.
  • Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Saute the Aromatics:

  • In the same skillet, add chopped onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes.

Deglaze the Pan:

  • Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Allow the broth to simmer for a few minutes to reduce slightly.

Add the Pasta Roni:

  • Return the cooked Pasta Roni to the skillet with the broth. Stir in heavy cream and cooked chicken. Cook for an additional 2-3 minutes, or until heated through and sauce has thickened slightly.

Serve and Garnish:

  • Transfer the Pasta Roni with Chicken to serving plates. Garnish with fresh parsley if desired.

Notes

While this recipe is undeniably delicious, be mindful of the sodium content. Packaged convenience foods often come with a hefty dose of salt. Here are a few ways to manage it:
● Use low-sodium chicken broth.
● Gradually add salt while cooking, tasting as you go to avoid overdoing it.
● Counteract the saltiness with fresh herbs like parsley or basil.
