For The Chicken:
- 1 lb boneless skinless chicken breasts
- 2 large eggs lightly beaten
- 1 cup cornstarch
- Vegetable oil for deep or shallow frying
- Salt and black pepper to taste
For The Honey Sauce:
- 1 garlic clove finely minced
- 1 tbsp rice vinegar
- ½ cup honey
- 1 tsp toasted sesame oil
- ½ tsp red chili flakes
- 2 tbsp soy sauce
Season the chicken pieces with salt and pepper. Dip each piece into the beaten eggs, ensuring it’s fully coated. Dredge the egg coated chicken in cornstarch, pressing lightly to adhere.
Heat vegetable oil in a deep frying pan or wok over medium high heat. Once the oil reaches 350°F (175°C), carefully add the chicken pieces in batches. Fry for 5–7 minutes until golden brown and crispy. Remove the chicken and drain on paper towels.
In a small saucepan, combine honey, soy sauce, rice vinegar, sesame oil, minced garlic, and chili flakes. Bring the mixture to a boil over medium heat, then reduce to a simmer. Let it simmer for 2–3 minutes until slightly thickened.
Place the fried chicken pieces in a large bowl.Pour the honey sauce over the chicken and toss gently to coat evenly. Serve immediately on a platter, garnished with sliced green onions if desired.
For an extra crunch, double coat the chicken pieces by dipping them in the batter twice before frying. Feel free to swap chicken breasts for thighs if you prefer juicier meat. Just adjust frying time accordingly.
If you want to make it gluten free, use tamari instead of soy sauce and make sure your cornstarch is certified gluten free.
