Ingredients
  

  • 1 whole organic chicken about 4 lbs
  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 4 garlic cloves minced
  • 2 tsp fresh rosemary chopped
  • 2 tsp fresh thyme chopped
  • 1 tsp paprika
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • 1 large lemon halved
  • 1 medium onion quartered
  • 2 cups organic root vegetables e.g., carrots, parsnips, or potatoes, cut into chunks

Instructions
 

Prepare the Chicken

  • Start by preheating your oven to 375°F (190°C). Pat the chicken dry with paper towels to ensure the seasoning sticks well.

Make the Marinade

  • In a small bowl, combine olive oil, lemon juice, garlic, rosemary, thyme, paprika, salt, and pepper. Stir until well blended.

Season the Chicken

  • Rub the marinade generously over the chicken, ensuring you coat every part, including under the skin for maximum flavor. Stuff the cavity with the halved lemon and onion quarters.

Arrange and Roast

  • Place the chicken in a baking dish. Surround it with the root vegetables, drizzled lightly with olive oil and a pinch of salt. Cover the dish loosely with aluminum foil to prevent excessive browning.

Roast to Perfection

  • Bake for about 1 hour. Remove the foil in the last 45 minutes to allow the skin to crisp up. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Rest and Serve

  • Let the chicken rest for 15 minutes before carving. This step locks in the juices and makes each bite tender and flavorful.
