Ingredients
  

  • 4 large chicken breasts approximately 2-3 pounds
  • Salt to taste
  • Pepper to taste
  • cup sour cream
  • 2 tablespoons mayonnaise
  • ½ cup freshly shredded Parmesan cheese
  • ½ cup Italian breadcrumbs
  • 2 tablespoons butter melted
  • Chopped fresh parsley optional, for serving

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with cooking spray and set aside.

Prepare the Chicken

  • Trim any excess fat from the chicken breasts. If they are particularly thick, slice them in half horizontally to create thinner cutlets. Lightly season all sides of the chicken with salt and pepper to taste. Place the chicken breasts in the prepared baking dish, ensuring they do not overlap.

Prepare the Sour Cream Mixture

  • In a small bowl, whisk together the sour cream, mayonnaise, and shredded Parmesan cheese until well combined.

Coat the Chicken

  • Evenly spread the sour cream mixture over the top of each chicken breast, ensuring they are well-coated.

Prepare the Breadcrumb Topping

  • In another small bowl, mix the Italian breadcrumbs with the melted butter until the breadcrumbs are evenly coated.

Add the Breadcrumb Topping

  • Sprinkle the breadcrumb mixture evenly over the coated chicken breasts.

Bake the Chicken

  • Place the baking dish in the preheated oven and bake for approximately 30 minutes, or until the chicken is fully cooked and the topping is golden brown. The internal temperature of the chicken should reach 165°F (74°C).

Serve

  • Once done, remove the chicken from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley if desired, and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
Avoid overcooking to keep the chicken moist and juicy.
