Ingredients

  • 4 boneless skinless chicken breasts (4–5 oz each)
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • ½ tsp salt use a low-sodium option if needed
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice
  • ½ cup low-sodium chicken broth
  • ½ cup unsalted butter or plant-based alternative for a dairy-free option

Instructions

Prepare the Chicken

  • Trim any excess fat from the chicken breasts. Pat them dry with a paper towel, ensuring a good sear during cooking.

Season the Chicken

  • In a small bowl, mix thyme, smoked paprika, salt, and pepper. Rub the seasoning mixture evenly over the chicken.

Sauté Garlic

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.

Cook the Chicken

  • Place the chicken breasts in the skillet. Sear for 4–5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Create the Sauce

  • Add unsalted butter to the skillet and let it melt. Pour in the low-sodium chicken broth and stir, scraping any browned bits from the bottom of the pan. Stir in lemon juice.

Simmer the Dish

  • Return the chicken breasts to the skillet. Reduce the heat to low, cover, and let them simmer for 12–15 minutes until fully cooked. Ensure the internal temperature reaches 165°F (74°C).

Serve and Enjoy
