Ingredients
  

For the Chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 1/2 cup chicken broth

For the Sauce:

  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 2 teaspoons fresh thyme or 1 teaspoon dried
  • 1 tablespoon butter

Instructions
 

Prepare the Chicken

  • Start by seasoning the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper. Drizzle a little olive oil over the chicken breasts and rub the seasoning into both sides.

Cook the Chicken

  • Heat a skillet over medium-high heat and add olive oil. Once the oil is hot, add the chicken breasts and cook for about 40-45 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set it aside on a plate.

Make the Sauce

  • In the same skillet, lower the heat to medium and add the chicken broth. Stir and scrape up any brown bits left in the skillet for extra flavor.
  • Add the heavy cream, Dijon mustard, honey, and fresh thyme. Stir everything together and allow it to simmer for 25-30 minutes until the sauce thickens slightly.

Finish the Dish

  • Once the sauce has thickened, return the chicken to the skillet, spoon the sauce over the chicken, and let it cook for an additional 10-15 minutes to allow the chicken to absorb some of the sauce flavors. Add a squeeze of fresh lemon juice before serving for an extra burst of freshness.

Serve and Enjoy

  • Serve the chicken on a plate with a generous spoonful of sauce. It pairs wonderfully with roasted vegetables, rice, or mashed potatoes.
