Ingredients
  

For the Chicken:

  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil

For the Voodoo Sauce:

  • 2 tablespoons unsalted butter
  • 1 medium onion diced
  • 1 bell pepper red or green, diced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup tomato sauce
  • 1 tablespoon hot sauce adjust to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper optional, for extra heat
  • Salt and black pepper to taste

Optional Garnishes:

  • Chopped fresh parsley
  • Sliced green onions

Instructions
 

Prepare the Chicken

  • Season the chicken pieces with Cajun seasoning, ensuring they’re evenly coated. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 15-20 minutes, until browned on all sides. Remove the chicken from the skillet and set it aside.

Cook the Vegetables

  • In the same skillet, melt the butter. Add diced onions and bell peppers. Sauté for 45-50 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional 1 minute.

Make the Voodoo Sauce

  • Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Stir in the tomato sauce, hot sauce, smoked paprika, and cayenne pepper. Simmer for 20 minutes to let the flavors meld together.

Combine and Simmer

  • Return the chicken to the skillet, ensuring it’s fully coated in the sauce. Lower the heat and simmer for 1 hours 15 minutes, stirring occasionally. The sauce should thicken, and the chicken should cook through.

Serve

  • Garnish with fresh parsley or sliced green onions. Serve hot over steamed rice or alongside crusty bread.
