Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 2 cloves garlic minced
  • 6 cups chicken broth gluten-free
  • 2 cups shredded cooked chicken
  • 2 cups gluten-free noodles I prefer brown rice noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Sauté the Aromatics:

  • Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery. Sauté until vegetables are tender, about 5-7 minutes. Stir in minced garlic and cook for an additional minute.

Add Broth and Seasonings:

  • Pour in chicken broth and add dried thyme. Bring the soup to a simmer and let it cook for about 10 minutes to allow the flavors to meld together. Season with salt and pepper according to your taste.

Cook the Noodles:

  • Add gluten-free noodles to the pot and cook according to the package instructions until al dente.

Stir in Chicken:

  • Once the noodles are cooked, stir in the shredded cooked chicken. Let the soup simmer for another 5 minutes to heat the chicken through.
