Fried Chicken Feet are a delicious and crispy snack, popular in many cultures. To make them, first clean and prep the chicken feet by removing nails and any rough skin. Boil the feet for about 30 minutes to tenderize, then marinate them in a flavorful mix of soy sauce, garlic, ginger, and spices. Coat with flour and deep fry until golden and crispy. Serve hot, garnished with fresh herbs or chili for extra flavor.

For Boiling:
- 2 lb 900 g chicken feet, cleaned and nails trimmed
- 3 –5 cups of water enough to cover the feet
- 3 large slices of fresh ginger
- 2 stalks green onion chopped
- 3 cloves garlic smashed
- 1 tablespoon 15 g sugar
- 1 cup Chinese cooking wine
- 2 tablespoons 30 ml soy sauce
- 1 stick of cinnamon
- 3 star anise pods
For Coating & Frying:
- 1 cup 128 g all-purpose flour
- 1 teaspoon 4 g salt
- 2 eggs beaten
- 1 quart 900 ml oil for deep-frying
- Sea salt to taste (for serving)
Boil for Flavor:
In a large pot, add chicken feet, water, ginger, green onion, garlic, cinnamon, star anise, sugar, soy sauce, and Chinese cooking wine. Bring to a boil over medium-high heat.
Reduce heat and simmer for 45–60 minutes or until the feet are tender. Remove the chicken feet and let them cool slightly.
Deep Fry:
Heat oil in a deep fryer or heavy pan to 350°F (175°C).Carefully add the coated chicken feet in batches.
Fry until golden brown and crispy, about 4–5 minutes per batch. Remove and place on a wire rack or paper towels to drain excess oil.
