Ingredients
  

For the Chili Asiago Cheese Sauce:

  • 3 tablespoons olive oil
  • ½ cup chili rub store-bought or homemade
  • 3 cloves garlic minced
  • 1 shallot minced
  • ¼ cup white wine
  • 1 ½ cups chicken stock
  • 1 ½ cups heavy cream
  • 1 ½ cups milk
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 tablespoons flour
  • 1 ½ cups grated Asiago cheese
  • ¼ cup chopped fresh basil

For the Chicken Pasta:

  • 4 ounces penne pasta
  • 4 slices bacon diced
  • 2 boneless skinless chicken breasts, grilled or cooked
  • 2 cups diced tomatoes
  • 4 tablespoons chopped green onions

Instructions
 

Make the Creamy Asiago Cheese Sauce:

  • ● Heat olive oil in a saucepan over medium heat. Add chili rub, garlic, and shallot. Sauté until softened and fragrant, about 3 minutes.
  • ● Pour in white wine and cook until reduced by half. This deglazes the pan and adds depth of flavor.
  • ● Increase heat to medium-high and whisk in chicken stock. Bring to a simmer, then reduce heat to medium-low.
  • ● Stir in heavy cream, milk, salt, and pepper. Let simmer for 5 minutes, allowing the flavors to meld.
  • ● In a small bowl, whisk together flour with 2 tablespoons of chicken stock to create a slurry. Slowly whisk the slurry into the simmering sauce until thickened.
  • ● Remove from heat and whisk in grated Asiago cheese and chopped basil. The sauce should be smooth and creamy. Set aside.

Assemble the Firebirds Chicken Pasta:

  • ● Cook penne pasta according to package instructions. Drain and set aside.
  • ● In a large skillet, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.
  • ● Add cooked chicken breasts to the skillet and shred with two forks. Cook for a couple of minutes to warm through.
  • ● Pour the prepared Asiago cheese sauce into the skillet with the chicken. Stir to combine.
  • ● Add cooked penne pasta and toss until well coated.
  • ● To serve, divide the cheesy pasta among plates and top with reserved crispy bacon, diced tomatoes, and chopped green onions.

Notes

Firebirds offers grilled chicken in their original recipe. You can grill your chicken breasts at home for a smoky flavor that mimics the restaurant version.
Simply preheat your grill to medium-high heat and grill the chicken breasts for 5-7 minutes per side, or until cooked through.
