Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 4 ounces cream cheese softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley for garnish

Instructions
 

Prepare the Chicken

  • Season the chicken breasts with salt and pepper on both sides.

Sear the Chicken

  • In a skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear until golden brown on both sides. Remove from skillet and set aside.

Sauté Onion and Garlic

  • In the same skillet, add chopped onion and minced garlic. Sauté until softened and fragrant.

Deglaze with Chicken Broth

  • Pour chicken broth into the skillet, scraping up any browned bits from the bottom of the pan. Bring to a simmer.

Add Cream Cheese

  • Reduce heat to low and add softened cream cheese to the skillet. Stir until melted and smooth.

Return Chicken to Skillet

  • Return the seared chicken breasts to the skillet, nestling them into the creamy sauce. Simmer gently until chicken is cooked through and sauce has thickened.

Notes

Don’t overcook the chicken breasts, as they can become dry and tough. Aim for an internal temperature of 165°F (74°C) for perfectly juicy chicken.
