Equipment

  • Skillet
  • Knife
  • Cutting Board
  • Tongs
  • Mixing bowl

Ingredients

For the Chicken:

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 tablespoon of olive oil for cooking
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt use a small amount to keep sodium low
  • 1/4 teaspoon of black pepper optional
  • 1/2 cup of low-sodium chicken broth or water for moisture

For the Side:

  • 1 cup of steamed carrots to accompany the chicken
  • 1 cup of steamed zucchini optional for added veggies

Instructions

Prepare the Chicken

  • Start by trimming any excess fat from the chicken breasts. You want the chicken to be lean and easy to digest. Afterward, pat the chicken dry with a paper towel to remove any moisture.

Season the Chicken

  • In a small bowl, combine the garlic powder, onion powder, dried thyme, salt, and black pepper. Sprinkle this mixture evenly over both sides of the chicken breasts, ensuring they are well-coated with the spices. Keep it simple and avoid harsh seasonings like hot spices or garlic chunks that may irritate the stomach.

Cook the Chicken

  • Heat olive oil in a large skillet over medium heat. Once the pan is hot, add the chicken breasts. Cook for about 6–8 minutes on each side, or until the chicken is golden brown and fully cooked (internal temperature should reach 165°F or 74°C). If needed, add a splash of low-sodium chicken broth or water to the pan to keep the chicken moist and prevent it from drying out.

Rest the Chicken

  • After cooking, remove the chicken from the skillet and let it rest for 5 minutes. This helps keep the juices locked inside, ensuring the chicken stays tender and moist.

Serve

  • Once rested, slice the chicken into thin strips or serve whole, depending on your preference. Pair it with steamed vegetables like carrots and zucchini for a well-rounded meal. You can also add a side of white rice or mashed potatoes for a comforting and easy-to-digest dish.
