Ingredients
  

  • 2 boneless skinless chicken breasts

  • 2 tablespoons butter
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers drained
  • 1/4 cup chopped fresh parsley
  • 2 brioche buns split and toasted
  • Lettuce for garnish
  • Mayonnaise for spreading (optional)

Instructions
 

Pound and Flour:

  • ● Butterfly the chicken breasts by carefully slicing them in half horizontally, leaving them attached at the hinge.
  • ● Pound gently with a mallet or rolling pin to an even thickness of about 1/2 inch.
  • ● Season generously with salt and pepper. Dredge each chicken piece in flour, shaking off any excess.

Get Golden:

  • ● Heat olive oil and butter in a large skillet over medium-high heat.
  • ● Sear the chicken for 2-3 minutes per side, until golden brown and cooked through.
  • ● Remove from the pan and set aside.

Sauce Sensation:

  • ● In the same pan, whisk together white wine, chicken broth, and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom.
