Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup prepared pesto
  • 1/2 cup sliced fresh mozzarella cheese
  • 1 large tomato sliced
  • 4 slices of your favorite bread ciabatta, focaccia, sourdough all work great!
  • Handful of fresh basil leaves optional

Instructions
 

Step 1: Prepare the Chicken:

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a grill pan or skillet over medium-high heat.
  • Grill chicken for about 6-7 minutes per side or until fully cooked.
  • Remove from heat and let it rest for a few minutes before slicing into thin strips.

Step 2: Assemble the Sandwich:

  • Spread a generous amount of pesto on one side of each bread slice.
  • On half of the bread slices, layer the grilled chicken, mozzarella cheese, tomato slices, and fresh basil leaves (if using).
  • Top with the remaining bread slices, pesto side down.

Step 3: Grill the Sandwich:

  • Heat the grill pan over medium heat.
  • Place the assembled sandwiches on the pan.
  • Grill for 2-3 minutes per side or until the bread is golden brown, and the cheese is melted.

Step 4: Serve and Enjoy:

  • Cut the sandwiches in half and serve immediately.
