Instructions
Step 1: Prepare the Chicken:
Season chicken breasts with salt and pepper.
Heat olive oil in a grill pan or skillet over medium-high heat.
Grill chicken for about 6-7 minutes per side or until fully cooked.
Remove from heat and let it rest for a few minutes before slicing into thin strips.
Step 2: Assemble the Sandwich:
Spread a generous amount of pesto on one side of each bread slice.
On half of the bread slices, layer the grilled chicken, mozzarella cheese, tomato slices, and fresh basil leaves (if using).
Top with the remaining bread slices, pesto side down.
Step 3: Grill the Sandwich:
Heat the grill pan over medium heat.
Place the assembled sandwiches on the pan.
Grill for 2-3 minutes per side or until the bread is golden brown, and the cheese is melted.
Step 4: Serve and Enjoy:
Cut the sandwiches in half and serve immediately.
