Equipment

  • Large skillet
  • Spatula
  • Mixing bowl
  • Toaster (optional)

Ingredients

  • 2 boneless skinless chicken breasts
  • 8 oz cremini mushrooms sliced
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/4 cup Dijon mustard
  • 1/2 cup heavy cream
  • 1/4 cup grated Gruyère cheese
  • 2 slices sourdough bread or your favorite!
  • 1 tbsp butter softened
  • 1 head romaine lettuce shredded
  • Salt and pepper to taste

Instructions

Sizzle & Sear:

  • Heat olive oil in the skillet over medium-high heat. Season chicken breasts with salt and pepper, then add to the pan. Cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from pan and set aside.

Mushroom Medley:

  • In the same skillet, melt remaining butter and add garlic. Saute for 30 seconds, then add mushrooms. Cook for 5-7 minutes, or until softened and golden brown.

Creamy Chorus:

  • Stir in Dijon mustard and heavy cream, scraping up any browned bits. Bring to a simmer and cook for 2-3 minutes, or until slightly thickened. Season with salt and pepper to taste.

Build the Symphony:

  • Slice the chicken breasts and pile them onto the toasted bread slices. Top with sauteed mushrooms, creamy Dijon sauce, and a generous sprinkle of Gruyère cheese.

Grand Finale:

  • Toast the open-faced sandwiches under a broiler for 2-3 minutes, or until cheese is melted and bubbly. Pile on the shredded lettuce, close the sandwich with a flourish, and dig in!
