Chicken fried rice is a quick, flavorful dish made with cooked rice, chicken, and vegetables. Start by cooking diced chicken in oil, then set aside. Sauté onions, garlic, and vegetables, followed by adding rice and soy sauce. Mix in scrambled eggs and chicken. Stir-fry everything until evenly combined and serve hot for a satisfying meal.

Ingredients
  

  • 2 tablespoons vegetable oil
  • 2 boneless skinless chicken breasts, diced into small pieces
  • 1/2 cup diced carrots
  • 3 cups cooked and chilled rice preferably day-old rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 large eggs beaten
  • 2 green onions chopped (for garnish)
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients:

  • Dice the chicken breasts into small bite-sized pieces. Chop the carrots into small cubes and slice the green onions for garnish.

Heat the Wok or Skillet:

  • Place a large wok or skillet on medium-high heat. Add 1 tablespoon of vegetable oil and let it warm up.

Cook the Chicken:

  • Add the diced chicken breast to the skillet. Season with a pinch of salt and pepper. Cook for 6-7 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Remove the chicken from the skillet and set it aside.

Cook the Vegetables:

  • In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced carrots and sauté for about 2-3 minutes, until they start to soften.

Scramble the Eggs:

  • Push the carrots to one side of the skillet. Add the beaten eggs to the other side and cook them through, stirring occasionally, until scrambled. Combine the eggs with the carrots.

Stir in the Rice:

  • Add the chilled rice to the skillet. Use your spatula to break up any clumps of rice and mix it with the vegetables and eggs. Stir well to combine.

Add Soy Sauce and Sesame Oil:

  • Pour in the soy sauce and sesame oil, stirring to coat the rice evenly with the sauces. Season with salt and pepper to taste.

Combine Chicken and Rice:

  • Return the cooked chicken to the skillet and stir everything together to combine. Cook for an additional 2-3 minutes, ensuring the chicken is heated through.

Garnish and Serve:

  • Once everything is well-mixed and heated, remove from heat. Garnish with chopped green onions. Serve hot and enjoy!
