Ingredients
  

  • 3.1 lbs 1400 g cooked chicken breast, shredded or chopped
  • 1 1/4 cups cottage cheese paneer, crumbled
  • 2 1/2 tablespoons olive oil
  • 5 tablespoons fresh dill finely chopped
  • 5 cloves garlic minced
  • 2 1/2 tablespoons Dijon mustard
  • 7 1/2 tablespoons scallions thinly sliced
  • 1 1/4 teaspoons cumin seeds
  • 1 1/4 teaspoons chili powder adjust to taste
  • Salt to taste
  • 2 1/2 tablespoons fresh coriander leaves chopped (for garnish)
  • 2 1/2 tablespoons lemon juice

Instructions
 

Prepare the chicken:

  • If not already done, cook and shred or chop the chicken breast into bite-sized pieces.

Heat the oil:

  • In a large pan or skillet, heat the olive oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.

Sauté aromatics:

  • Add the minced garlic and chopped fresh dill to the pan. Stir for about 1-2 minutes, until fragrant and softened.

Mix in the chicken:

  • Add the shredded chicken breast to the pan and stir to combine. Cook for 2-3 minutes, letting the chicken absorb the flavors.

Add seasonings:

  • Sprinkle in the chili powder, salt, and Dijon mustard. Stir everything together to ensure the chicken is well-coated with the spices and mustard.

Incorporate cottage cheese:

  • Add the crumbled cottage cheese (paneer) to the pan and mix it into the chicken. Cook for another 2-3 minutes, allowing the cheese to soften and integrate with the chicken.

Add fresh ingredients:

  • Stir in the sliced scallions and lemon juice. Let everything cook together for an additional minute to blend the flavors.

Garnish and serve:

  • Transfer the mixture to a serving dish. Garnish with fresh coriander leaves for a burst of color and freshness.
