Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 4 slices provolone cheese
  • 2 hoagie rolls split open

Instructions
 

Saute the Veggies:

  • Heat the olive oil in a large skillet over medium heat. Add the onions and bell peppers, and cook until softened and slightly caramelized, about 5-7 minutes. Season with a pinch of salt and pepper.

Sear the Chicken:

  • Push the vegetables to one side of the pan. Add the chicken slices in a single layer and let them cook undisturbed for a minute or two, allowing them to brown. Season generously with garlic powder, oregano, paprika, salt, and pepper.

Philly Fusion:

  • Once the chicken is cooked through (no longer pink in the center), stir it together with the vegetables. Divide the mixture evenly between the two hoagie roll halves.

Cheese Meltdown:

  • Top each roll with two slices of provolone cheese. Cover the skillet and cook for 1-2 minutes, or until the cheese is melted and bubbly.
