Ingredients
  

  • 4 slices of ciabatta bread
  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 4 tablespoons of pesto sauce
  • 1 large tomato thinly sliced
  • 8 slices of fresh mozzarella cheese
  • Fresh basil leaves

Instructions
 

  • Preheat your panini press or grill pan.
  • Season the chicken breasts with salt and pepper on both sides.
  • Grill the chicken breasts until cooked through, about 4-5 minutes per side.
  • While the chicken is cooking, spread pesto sauce on each slice of ciabatta bread.
  • Once the chicken is done, remove it from the grill and slice it into thin strips.
  • Assemble the paninis by layering chicken slices, tomato slices, mozzarella cheese, and fresh basil leaves onto two slices of bread.
  • Top with the remaining bread slices to form sandwiches.
  • Place the sandwiches onto the panini press or grill pan and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes.
  • Remove from the heat and let cool for a minute before slicing in half.
  • Serve hot and enjoy the deliciousness!
