  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder optional, for a touch of heat
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 12 ounces dried pasta penne, rotini, or farfalle work well

Instructions
 

Boil the Pasta

  • ● Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to package instructions for al dente.
  • ● Remember, we want the pasta cooked but still with a bit of a bite. While the pasta cooks, get ready for the flavorful chicken and sauce.

Sauté the Chicken

  • ● Heat the olive oil in your large skillet or frying pan over medium heat. Season the chicken pieces with salt and pepper.
  • ● Add the chicken to the hot pan and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the cooked chicken from the pan and set aside on a plate.

Build the Creamy Sauce

  • ● In the same pan (with the leftover chicken drippings), add the diced onion and cook until softened, about 3 minutes.

Simmer and Thicken

  • ● Pour in the diced tomatoes with their juices. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
  • ● Here comes the creamy indulgence – whisk in the heavy cream and grated Parmesan cheese until fully incorporated. Let the sauce simmer for another 2-3 minutes, until it thickens slightly.

Bring it All Together
