This Buffalo Chicken Philly Cheesesteak recipe features tender chicken breast sautéed with onions and peppers, then smothered in spicy Buffalo sauce. Equipment

Ingredients
  

  • 1 lb boneless skinless chicken thighs, thinly sliced
  • 4 hoagie rolls
  • Salt and freshly ground black pepper to taste
  • ½ green bell pepper thinly sliced
  • 2 tablespoons unsalted butter
  • ½ sweet onion thinly sliced
  • 4 slices provolone cheese
  • Blue cheese dressing for topping
  • ½ cup buffalo sauce adjust to taste

Instructions
 

  • Thinly slice the green bell pepper and sweet onion.
  • In a large skillet over medium heat, melt 1 tablespoon of the butter. Add the sliced onions and green peppers. Cook for 5–6 minutes until softened and lightly browned. Remove from skillet and set aside.
  • In the same skillet, add the remaining tablespoon of butter. Add the sliced chicken thighs, season with salt and black pepper, and cook over medium-high heat for 6–8 minutes until fully cooked and lightly browned.
  • Reduce heat to medium. Pour the buffalo sauce over the chicken and stir well to coat evenly. Cook for another 1–2 minutes until the sauce is heated through.
  • Preheat oven or toaster if desired. Slice open the hoagie rolls. Optionally, toast them lightly. Layer the cooked chicken and buffalo sauce mixture onto the bottom half of each roll.
  • Add one slice of provolone cheese per sandwich over the hot chicken. Top with the sauteed onions and peppers.
  • Place the assembled sandwiches on a baking sheet and broil for 1–2 minutes until the cheese is melted and bubbly.
  • Drizzle with blue cheese dressing to your taste and close the sandwich with the top half of the roll.
  • Serve hot with fries, chips, or a side salad.
