- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 teaspoons olive oil
- 4 slices of bread whole wheat or your preference
- 2 slices of cheese cheddar, Swiss, or your favorite
- 2 large eggs
- 2 slices of tomato
- 2 lettuce leaves
- Optional toppings: avocado slices bacon strips, hot sauce
Season the chicken breasts with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 6-8 minutes on each side, or until fully cooked through. Remove from heat and let rest.
While the chicken is cooking, toast the bread slices until golden brown. If using a grill pan, you can also toast the bread directly on the pan for added flavor.
In the same skillet, crack the eggs and cook to your desired doneness (fried or scrambled).
To assemble the sandwiches, start by placing a slice of cheese on each piece of toasted bread.
Top each slice of bread with a cooked chicken breast, followed by a slice of tomato and a lettuce leaf.
Add the cooked eggs on top of the lettuce and close the sandwiches with the remaining slices of bread.
