Ingredients
  

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 teaspoons olive oil
  • 4 slices of bread whole wheat or your preference
  • 2 slices of cheese cheddar, Swiss, or your favorite
  • 2 large eggs
  • 2 slices of tomato
  • 2 lettuce leaves
  • Optional toppings: avocado slices bacon strips, hot sauce

Instructions
 

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 6-8 minutes on each side, or until fully cooked through. Remove from heat and let rest.
  • While the chicken is cooking, toast the bread slices until golden brown. If using a grill pan, you can also toast the bread directly on the pan for added flavor.
  • In the same skillet, crack the eggs and cook to your desired doneness (fried or scrambled).
  • To assemble the sandwiches, start by placing a slice of cheese on each piece of toasted bread.
  • Top each slice of bread with a cooked chicken breast, followed by a slice of tomato and a lettuce leaf.
  • Add the cooked eggs on top of the lettuce and close the sandwiches with the remaining slices of bread.
