Ingredients
  

  • 1 tablespoon olive oil
  • 8 ounces boneless skinless chicken breasts, cut into bite-sized pieces
  • 5 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 6-ounce package Boursin cheese, any flavor (garlic & herb recommended)
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 12 ounces dried pasta penne, farfalle, or rotini recommended
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish, optional)

Instructions
 

Sauté the Chicken and Bacon

  • ● Heat olive oil in a large pot over medium heat. Add chicken and cook until golden brown on all sides, about 5 minutes. Remove from the pot using tongs and set aside.
  • ● In the same pot, add bacon and cook until crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Build the Creamy Sauce

  • ● Add onion to the pot with the remaining bacon grease and cook until softened, about 5 minutes. Stir in garlic and cook for another minute until fragrant.
  • ● Pour in the diced tomatoes and bring to a simmer. Let it simmer for 5 minutes, allowing the flavors to meld.
  • ● Reduce heat to low and stir in Boursin cheese, chicken broth, and Parmesan cheese. Whisk until the cheese is melted and a smooth sauce forms. Season with salt and pepper to taste.

Bring it All Together

  • ● Add the cooked pasta and chicken back to the pot with the sauce. Toss gently to coat everything evenly.
