For The Chicken & Vegetables:
- 1 lb 450g boneless chicken breast
- 2 slices fresh ginger
- 2 cups water for boiling
- 1 cup cherry tomatoes halved
- 1 carrot shredded
- 3 spring onions sliced (white and green parts separated)
- 1 shallot finely chopped
For the Sauce:
- 2 tbsp light soy sauce
- 1 tbsp vinegar rice vinegar preferred
- ½ tsp salt
- 1½ tbsp sugar
- 1 tbsp sesame oil
- ¼ tsp lemon zest
- 1 tbsp chopped spring onions from the white part
- ½ tsp ground coriander
Cook the Chicken:
Bring 2 cups of water to a boil in a medium saucepan. Add ginger slices and chicken breast to the pot. Reduce to a simmer and poach the chicken for about 15–18 minutes, or until fully cooked. Remove the chicken and let it cool slightly, then shred it into thin strips using forks or your hands.
Make the Sauce:
In a bowl, whisk together light soy sauce, vinegar, salt, sugar, sesame oil, lemon zest, chopped spring onions, and ground coriander until well combined.
Assemble the Dish:
In a large mixing bowl or serving platter, combine the shredded chicken, cherry tomatoes, shredded carrot, shallot, and most of the spring onions. Pour the sauce over the mixture and toss gently to coat everything evenly.
