Ingredients
  

  • 2 boneless skinless chicken breasts (around 6 oz each)
  • 1 tbsp olive oil
  • 1 medium zucchini sliced
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup bell pepper sliced
  • 1/2 cup onion sliced
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

Step 1: Preheat and Prepare

  • Preheat your oven to 375°F (190°C). Lightly grease or line a baking dish or roasting pan with a bit of olive oil or non-stick spray to ensure the chicken doesn’t stick.

Step 2: Season the Chicken

  • Place the chicken breasts in the baking dish. Drizzle them with 1 tbsp of olive oil and rub the oil evenly over the chicken. Sprinkle both sides of the chicken with garlic powder, dried basil, oregano, salt, and pepper. This simple seasoning combo will enhance the flavors without adding extra calories or carbs.

Step 3: Add the Vegetables

  • Now, arrange the sliced zucchini, cherry tomatoes, bell pepper, and onion around the chicken in the baking dish. These veggies are high in fiber and vitamins, making them a perfect complement to the lean chicken.

Step 4: Bake

  • Cover the baking dish with aluminum foil (if you want the chicken to stay moist). Place it in the oven and bake for 25 minutes. After 25 minutes, remove the foil, and bake for an additional 5 minutes to allow the chicken to brown slightly on top and the vegetables to become tender.

Step 5: Check for Doneness

  • Ensure that the chicken has reached an internal temperature of 165°F (74°C) to ensure it’s fully cooked. If needed, bake for an extra 5 minutes.

Step 6: Serve and Garnish

  • Remove the dish from the oven and let the chicken rest for a couple of minutes. Garnish with fresh parsley if you like and serve hot. This dish pairs wonderfully with a side of steamed cauliflower rice or a small green salad.
